Honey Apple Cake

There’s no sweeter sendoff into the new year than this dessert. We let the apples and honey do the talking in the cake, and the warm seasonings shine in the spiced whip. For the homemade whipped cream, chill your mixing bowl prior to whipping and take care not to over-mix to achieve those airy dollops. hello, checking 123

Preheat oven to 218 °C.
Make the apple butter: In a large saucepan over medium low heat, sweat apples (5) with sugar (¾ cup), butter & salt (4 Tbsp) until soft & all liquid is reduced, 1 in mins.
Add apple cider & cook down, 2-3 mins more. Set aside.
Whisk flour (2 ½), baking soda (1 ½ tsp), baking powder (3 ½ tsp) & cinnamon (1 Tbsp); set aside.
In a separate large bowl, whisk honey (¾ cup), eggs (3), orange zest (1 Tbsp) & juice (¼ cup). Mix in apple butter until fully incorporated, then mix in dry ingredients.
Transfer to a greased 10 inch round baking pan. Bake until center is cooked through, 60-70 mins; cool.
While the cake bakes, make the whip: In a large bowl, whip heavy cream (2 cups) with sugar (3 Tbsp), salt (¼ tsp), allspice (¼ tsp), & sumac (¼ tsp) until medium peaks form.
Slice & serve cake with spiced whip on the side.
